🫒5 tbsp olive oil
🧄5 cloves garlic, finely chopped
🍷1 cup dry white wine
🌿1 large handful parsley, chopped
🍞2 tbsp dry breadcrumbs
🥖Crusty bread, to serve
Method
Serves 21
Heat the olive oil in a large pot and add half the garlic for a few seconds.2
Add the mussels, cover and shake over a high heat for 2–3 minutes until they start to open.3
Pour in the wine, then add the remaining garlic, the parsley and the breadcrumbs.4
Cover and cook for 3–4 minutes more, shaking the pot, until all the mussels are open and the sauce has thickened slightly. Throw away any that stay shut.5
Season with pepper and serve straight from the pot with plenty of bread.✓ What Makes it Authentic
Buzara is a classic Adriatic way of cooking shellfish; the white version (na bijelo) uses wine and garlic, while the red (crvena) adds tomato.
