California Roll

Crab, avocado and cucumber rolled inside out, rice on the outside — the roll that introduced sushi to the West.

Created in Los Angeles in the early 1970s by chef Ichiro Mashita, who swapped raw tuna for avocado and hid the seaweed inside to ease nervous American diners into sushi.
