🥔Yellow potatoes (Yukon Gold work well), 1kg boiled and peeled
🌶️Ají amarillo paste, 3 tablespoons
🍋Limes, juice of 2
🫒Vegetable oil, 3 tablespoons
🥑Ripe avocados, 2 sliced
🐟Canned tuna in oil, 2 x 160g tins drained
🧅Red onion, half finely diced
🥄Mayonnaise, 4 tablespoons
🧂Salt and white pepper, to taste
Method

Boil the potatoes in salted water until very tender, then drain and rice or mash them while still hot until completely smooth with no lumps. Allow to cool for 5 minutes.2
Mix the warm mashed potato with ají amarillo paste, lime juice, oil, salt and white pepper. Knead it together like a dough until it becomes smooth, pliable and intensely yellow — taste and adjust the lime and chilli to your liking.3
Mix the drained tuna with the mayonnaise and finely diced red onion, seasoning well with salt and pepper to make a creamy filling.4
Line a small rectangular dish or use individual ring moulds on a tray. Press an even layer of the yellow potato mixture into the bottom, about 2cm thick, using wet hands or a spoon to smooth it flat.5
Layer the sliced avocado over the potato, covering it completely, then spread the tuna mayonnaise mixture evenly over the avocado.6
Top with a final layer of potato mixture, pressing down gently to seal everything in. Refrigerate for at least one hour to firm up before serving.7
To serve, unmould carefully onto plates and garnish with a little extra mayonnaise, sliced olives, and a sprinkle of chopped parsley or a thin slice of boiled egg for a traditional finish.User Reviews
