Ingredients
🥩500g beef shin, cubed
🐖500g pork shoulder, cubed
🐑500g lamb or venison, cubed
🧅1kg onions, finely chopped
🌶️3 tbsp sweet paprika and 1 tsp hot paprika
🫑2 peppers, chopped
🍅2 tbsp tomato paste
🍷1 cup red wine
🧄4 cloves garlic, bay leaves
🫗4 tbsp lard or oil
Method
Serves 3
1
Cook the onions slowly in lard until very soft, almost a paste.
2
Add the beef first and brown it, then add the pork and the lamb or venison a little later, as they cook faster.
3
Take the pot off the heat, stir in both paprikas so they don't burn, then add the peppers, tomato paste, garlic and bay.
4
Pour in the wine and enough water to cover, and simmer gently for 2.5–3 hours, topping up with water as needed.
5
Season with salt and serve hot and thick, with bread for dipping.
✓ What Makes it Authentic

Čobanac, the 'shepherd's stew', is traditionally cooked outdoors in a kotlić (cauldron) over an open fire in Slavonia, and cooking competitions are held in its honour.
