About this Dish

Chengdu's iconic street noodles — wheat noodles in a spicy, numbing sauce of sesame paste, chilli oil, Sichuan pepper and minced pork.

History & Origin

Dan dan noodles take their name from the carrying pole (dan) used by street vendors in Chengdu who carried the ingredients in baskets suspended from the pole. They walked through the streets making noodles to order for workers and passersby. The sauce is built from Chinese sesame paste (not tahini — the flavour is different), Sichuan chilli oil, black vinegar and ground Sichuan peppercorn. Ya cai — preserved Yibin vegetables — are the traditional topping. Food writer Fuchsia Dunlop, who studied at the Sichuan Institute of Higher Cuisine in Chengdu, called dan dan noodles the dish that made her understand Sichuan food.

🍜Thin wheat noodles, 400g
🐷Pork mince, 200g
🫙Chinese sesame paste (not tahini), 4 tbsp
🌶️Sichuan chilli oil, 3 tbsp
🌿Sichuan peppercorns, ground, 1 tsp
🫙Soy sauce, 2 tbsp
🍶Chinese black vinegar, 1 tbsp
🧄Garlic cloves, minced, 4
🫘Ya cai (Yibin preserved vegetables), 3 tbsp
🧅Spring onions, sliced, for garnish
Method

Make the sauce by combining sesame paste, chilli oil, black vinegar, soy sauce and ground Sichuan peppercorn. Thin with a little hot water until pourable.

Cook the pork mince in a hot wok with oil until crispy and golden. Add the ya cai preserved vegetables and toss together. Season with soy sauce.

Cook the noodles in boiling water until al dente. Reserve a cup of noodle water.

Divide the sauce between bowls. Add a splash of the hot noodle water and stir.

Drain the noodles and add to the bowls. Top with the crispy pork mince and ya cai.

Finish with extra chilli oil, ground Sichuan peppercorn, blanched spinach or bok choy, and sliced spring onions. Mix everything together vigorously at the table before eating.
What Makes it Authentic

Use Chinese sesame paste not tahini — they are different. The sauce should have visible pools of chilli oil. Sichuan peppercorn is essential for the ma (numbing) sensation.
