Ingredients
🌾500g plain flour and about 220ml water, made into a stiff dough
🥩300g beef or pork, diced
🍅2 tomatoes, chopped (optional)
🫙Soy sauce, Shanxi aged vinegar and star anise
🧄Garlic, ginger and spring onions
🥬Chinese greens and coriander
Method
Serves 3
1
Knead the flour and water into a very firm dough, then rest it for 30 minutes.
2
Braise the meat with soy sauce, star anise, garlic, ginger and tomatoes until tender and saucy.
3
Hold the dough block over boiling water and shave thin strips off it with a curved knife so they fall straight in.
4
Boil for 3–4 minutes with the greens until the noodles float and are chewy.
5
Drain into bowls, spoon over the meat sauce and finish with vinegar and coriander.
✓ What Makes it Authentic

Knife-shaved noodles are a Shanxi speciality; skilled cooks shave the dough from a block held on one arm, so each noodle has thin edges and a thicker middle.
