Korean BBQ beef short ribs marinated in soy, Asian pear and garlic — grilled until caramelised and deeply savoury.

History & Origin

Galbi — Korean BBQ short ribs — is the premium dish of Korean BBQ culture, more celebratory and expensive than the everyday samgyeopsal. The LA cut galbi — thin cross-cut ribs — was developed by Korean immigrants in Los Angeles in the 1970s as an adaptation to the American butchery style, which cut ribs differently from Korean practice. The LA cut exposed more bone surface and allowed the marinade to penetrate more deeply, producing a better result. This American Korean innovation was later exported back to Korea where it became widely popular. The Asian pear marinade is as essential as in bulgogi — the enzymes tenderise the tough short rib meat uniquely effectively.

🍐Asian pear, grated, 1
🫙Soy sauce, 5 tbsp
🍬Brown sugar, 3 tbsp
🧄Garlic cloves, minced, 6
🫚Fresh ginger, grated, 1 tbsp
🍶Sesame oil, 2 tbsp
🧅Spring onions, finely sliced, 4
🍶Mirin, 2 tbsp
🫘Sesame seeds, for garnish
Method

Score the short ribs by cutting between each bone in a butterfly pattern to expose more surface area to the marinade.

Combine the grated Asian pear, soy sauce, brown sugar, garlic, ginger, sesame oil and mirin. Submerge the ribs completely. Marinate for a minimum of 6 hours, overnight is best.

Remove the ribs from the marinade and pat lightly dry. Reserve the remaining marinade.

Grill over very hot charcoal for 4-5 minutes per side, basting with the reserved marinade as they cook.

The ribs should be caramelised, slightly charred at the edges and deeply glazed. The caramelisation from the pear and sugar is the hallmark of great galbi.

Use scissors to cut between the bones at the table. Eat wrapped in lettuce with ssamjang and garlic.
What Makes it Authentic

Score the ribs deeply so the marinade penetrates the meat. Use Asian pear not apple — the enzymes are different. Marinate for at least 6 hours. The caramelisation on the grill is everything.
