Ingredients
🫘2 cups dried red kidney beans, soaked overnight
🥩500g stewing beef or salted pig's tail, cut up
🥥1 cup coconut milk
🍠300g yellow yam or sweet potato, cubed
🥕1 carrot, diced
🌾1 cup flour, for spinners
🌿4 sprigs thyme, 2 spring onions, 6 pimento berries
🌶️1 Scotch bonnet pepper, whole
🧄3 cloves garlic, crushed
Method
Serves 2
1
If using salted pig's tail, boil it in fresh water for 20 minutes and drain to remove excess salt.
2
Simmer the beans and meat in about 2.5 litres of water for 1.5–2 hours until both are tender.
3
Add the coconut milk, yam, carrot, garlic, thyme, spring onion, pimento and the whole Scotch bonnet.
4
Mix the flour with a pinch of salt and enough water to make a firm dough, then roll small pieces between your palms into thin spinners and drop them in.
5
Simmer for 20–25 minutes more until the yam is soft and the soup has thickened. Remove the Scotch bonnet and season to taste.
