History & Origin

Lasagna traces to ancient Greece and Rome, but the modern baked, layered version with tomato ragù developed in Emilia-Romagna, particularly the city of Bologna.

🐷Ground pork, 250g
🍅Crushed tomatoes, 400g tin
🧅Yellow onion, 1 large finely diced
🧄Garlic cloves, 3 minced
🧈Unsalted butter, 60g
🥛Whole milk, 750ml
🌾Plain flour, 60g
🧀Parmesan cheese, 150g freshly grated

In a large heavy pan, sauté the diced onion in a splash of olive oil over medium heat for 5 minutes until soft, then add the garlic and cook for another minute. Add the ground beef and pork, breaking it up with a spoon, and cook until browned all over.

Pour in the crushed tomatoes, season generously with salt, pepper, and a pinch of nutmeg, then let the ragù simmer on low heat for at least 45 minutes, stirring occasionally, until thick and rich.

To make the béchamel, melt the butter in a saucepan over medium heat, whisk in the flour and cook for 2 minutes, then gradually pour in the milk while whisking constantly until you have a smooth, thick sauce. Season with salt, pepper, and a little nutmeg.

Preheat your oven to 180°C (350°F). Cook the lasagna sheets according to packet instructions, then drain and lay them flat on a clean tea towel to prevent sticking.

In a deep baking dish, spread a thin layer of ragù on the bottom, then layer pasta sheets, more ragù, béchamel, and a scattering of Parmesan. Repeat the layers until you run out of ingredients, finishing with a generous layer of béchamel and a thick blanket of Parmesan on top.

Cover the dish tightly with foil and bake for 30 minutes, then remove the foil and bake for a further 20 minutes until the top is golden and bubbling. Let the lasagna rest for at least 15 minutes before cutting and serving so the layers hold together beautifully.
