History & Origin

Mango sticky rice (khao niao mamuang) is the dessert that converts people to Thai food. Its genius lies in simplicity and the extraordinary quality required of each component. The mango must be fully ripe Nam Dok Mai variety, intensely fragrant and sweet. The rice must be glutinous rice, soaked overnight and steamed — not boiled, never boiled. The dish is seasonal — mango season in Thailand runs from March to June — and Thais argue that mango sticky rice eaten outside this season from lesser mangoes is not worth eating. The coconut cream sauce heated gently with salt and sugar creates a balance of sweet and savoury that amplifies both the rice and the mango.

🍚Glutinous sticky rice, soaked overnight, 400g
🥭Ripe Nam Dok Mai mangoes, peeled and sliced, 4
🥥Coconut cream, 400ml tin
🍬Caster sugar, 4 tbsp
🧂Salt, 1 tsp
🌿Pandan leaves, tied in a knot, 2
🫘Mung beans, toasted, 2 tbsp
🌸Sesame seeds, toasted, for garnish
Method

Soak the glutinous rice in cold water overnight minimum. Drain well.

Steam the rice in a bamboo steamer lined with muslin for 25-30 minutes until the grains are translucent and completely tender. Never boil sticky rice.

While the rice steams, make the sweet coconut sauce by combining the coconut cream, sugar, salt and pandan leaves in a small pan. Heat gently until the sugar dissolves. Do not boil.

When the rice is cooked, transfer to a bowl and pour over three quarters of the warm coconut sauce. Fold gently and leave to absorb for 15 minutes. The rice will become plump and glossy.

Peel and slice the mangoes. They must be fully ripe — the flesh should be intensely sweet and fragrant.

Serve the warm sticky rice alongside the mango slices. Drizzle over the remaining coconut sauce and garnish with toasted sesame seeds or mung beans.
