Indonesia's most famous dish globally — fried rice cooked with kecap manis (sweet soy sauce), shrimp paste, garlic and chilli, topped with a fried egg and served with prawn crackers. The kecap manis gives Indonesian fried rice its distinctive dark colour and sweet-savoury depth.

🍚Cooked jasmine rice, 3 cups (day-old and cold works best)
🥚Eggs, 3 large (2 for the rice, 1 fried on top per serving)
🍤Raw prawns, 200g peeled and deveined
🧄Garlic cloves, 4 minced
🌶️Red chillies, 2 finely sliced (adjust to heat preference)
🫙Kecap manis (sweet soy sauce), 3 tablespoons
🦐Shrimp paste (belacan or terasi), 1 teaspoon
🧅Shallots, 4 finely sliced
🫒Vegetable oil, 3 tablespoons
🍘Prawn crackers, to serve
Method

Heat 2 tablespoons of oil in a large wok over high heat until smoking. Add the shallots, garlic and chilli and stir-fry for 2 minutes until softened and fragrant.2
Push the aromatics to one side of the wok and add the shrimp paste, pressing it into the hot surface and cooking for 30 seconds until it smells toasty and deepens in colour. Mix everything together.3
Add the prawns and stir-fry for 2 minutes until they turn pink. Push everything to the side, crack 2 eggs into the wok, scramble them quickly and fold into the mixture before they fully set.4
Add the cold rice, breaking up any clumps with a spatula. Toss everything vigorously over high heat for 2-3 minutes so the rice gets coated and starts to catch slightly on the wok.5
Pour the kecap manis over the rice and toss well for another 1-2 minutes until the rice is evenly dark, glossy and fragrant. Taste and adjust with a pinch of salt if needed.6
In a separate pan, fry the remaining eggs in a little oil sunny-side up until the whites are set but the yolk is still runny. Serve the nasi goreng in bowls or on plates topped with a fried egg and a handful of prawn crackers on the side.7
Serve immediately with a pile of prawn crackers on the side, and optionally garnish with sliced spring onions, cucumber wedges and a wedge of lime for squeezing over.User Reviews
