About this Dish

Kenya's greatest culinary institution — goat or beef slowly roasted over charcoal until the exterior chars and the interior stays juicy. The meat is seasoned only with salt. Eaten at roadside nyama choma joints (butcheries that also grill) with ugali and kachumbari (tomato and onion salad). The communal act of tearing meat from bone with bare hands is central to the nyama choma experience.

Prepare your charcoal grill well in advance — pile the charcoal and light it, allowing it to burn down until you have glowing red embers covered with white ash with no open flames, about 30–40 minutes. This steady, even heat is the secret to good nyama choma.

Pat the goat pieces completely dry with a cloth, then rub all surfaces generously with coarse rock salt. That is your only seasoning — resist the urge to add anything else, as the flavour must come entirely from the meat, the smoke, and the char.

Place the meat pieces on the grill grate set about 15cm above the coals. Roast slowly, turning every 10–15 minutes to build an even, dark, crackling crust without burning. Large bone-in pieces will take 45 minutes to 1.5 hours depending on thickness — cut to the bone to check the juices run mostly clear.

While the meat rests, combine the chopped tomatoes, red onion, coriander, lemon juice, and chilli with a good pinch of salt and toss well. This is your kachumbari — it should be fresh and sharp to cut through the rich fatty meat.

To make ugali, bring 4 cups of salted water to a rolling boil in a heavy pot. Pour in the maize meal in a steady stream while stirring constantly, then reduce heat and stir vigorously for 5–7 minutes until it pulls away from the sides and forms a stiff, smooth dough. Turn it out onto a board or plate.

Bring the whole roasted goat to the table on a large chopping board or directly on newspaper. Chop roughly with a cleaver or serve whole pieces for people to tear apart with their hands — this communal tearing is not optional, it is the entire point of nyama choma.
