Ingredients
🌾500g strong flour
🍞Natural sourdough starter or 10g dried yeast
🥚6 egg yolks
🍬150g sugar and 1 tbsp honey
🧈180g soft butter
🍊150g candied orange and citron peel, and 150g raisins
🌼Vanilla and grated orange and lemon zest
Method
Serves 2
1
Make a first dough of flour, starter, sugar, yolks and butter and leave it to rise until tripled, often overnight.
2
Add the rest of the flour, yolks, sugar, honey, zest and vanilla, then knead in the butter until silky and elastic.
3
Work in the soaked raisins and candied peel, then shape into a ball and place in a tall paper mould.
4
Leave to rise until the dough reaches the top of the mould, then cut a cross in the top and add a knob of butter.
5
Bake at 180°C (350°F) for about 50 minutes, then hang upside down to cool so it keeps its height.
✓ What Makes it Authentic
