About this Dish

A rolled chapati stuffed with fried egg and vegetables, Uganda's favorite street food.

History & Origin

Named as a pun on "rolled eggs", the Rolex became a Kampala street-food phenomenon, so beloved the city now holds an annual Rolex Festival in its honor.

🌾Wheat flour, 2 cups
🧂Salt, 1 teaspoon
💧Warm water, about ¾ cup
🫙Vegetable oil, 4 tablespoons plus extra for frying
🥚Eggs, 2 large
🧅Red onion, 1 small, thinly sliced
🍅Tomato, 1 medium, thinly sliced
🥬Cabbage, 1 cup finely shredded
🌶️Green chilli, 1 small, finely chopped (optional)
Method

Mix the flour and salt together in a large bowl, then gradually add warm water and knead for about 5 minutes until you have a smooth, soft dough. Cover with a damp cloth and let it rest for 20 minutes.

Divide the dough into 4 equal balls. On a lightly floured surface, roll each ball out into a thin circle, brush the surface with a little oil, then fold and roll it out again — this layering technique gives the chapati its flakiness. Repeat this fold-and-roll process 2 or 3 times.

Heat a flat pan or skillet over medium-high heat and cook each chapati for about 1–2 minutes per side, brushing with a little oil, until golden brown spots appear and it is cooked through. Stack and keep warm under a clean cloth while you cook the rest.

In a bowl, beat 2 eggs together with a pinch of salt and the chopped chilli if using. Add a little oil to the hot pan and pour in the egg mixture, spreading it out flat into a thin omelette roughly the same size as your chapati.

Before the egg sets completely, lay one chapati directly on top of the runny egg so they stick together. Let it cook for another 30 seconds, then flip the whole thing so the egg side faces up and cooks through — just 1 more minute.

Lay fresh slices of tomato, onion, and shredded cabbage across the centre of the egg side. Roll the chapati tightly into a cylinder like a wrap, then wrap the bottom half in a piece of paper or foil to hold it together.

Serve immediately while warm — the Rolex is best eaten fresh, right after rolling. You can add a drizzle of hot sauce or ketchup inside before rolling if you like extra flavour.
