About this Dish

Spongy cheese balls simmered in light sugar syrup.

History & Origin

The subject of a long-running Bengal-vs-Odisha origin dispute, roshogolla is made from chhena (curdled milk) kneaded smooth and poached until it doubles in size.

🥛Full fat milk, 2 litres
🍋Lemon juice or white vinegar, 4 tablespoons
🌾All-purpose flour (maida), 1 teaspoon
🥣Semolina (sooji), 1/2 teaspoon
🍬White sugar, 2 cups
💧Water, 5 cups
🌸Rose water, 1 teaspoon
🟢Cardamom pods, 3-4 lightly crushed
💚Green cardamom pods, 3-4 lightly crushed
Method

Bring the milk to a boil in a heavy pot, then reduce heat slightly. Add lemon juice or vinegar slowly while stirring until the milk curdles completely and the whey turns greenish and clear. Stop adding acid as soon as it curdles.

Drain the curdled milk through a muslin or cheesecloth-lined strainer. Rinse the chenna (paneer) gently under cold water to remove the sour taste, then gather the cloth and squeeze out as much water as possible. Hang it for 30 minutes to drain further.

Transfer the chenna to a clean surface and knead it very well with the heel of your hand for 8-10 minutes until it becomes smooth, soft, and slightly greasy. Add the flour and semolina and knead for another 2 minutes — the dough should be crack-free and soft like clay.

Divide the dough into small equal portions and roll them into smooth balls between your palms with no cracks, as any crack will cause them to break during cooking. You should get about 12-15 balls.

In a wide, deep pot bring the sugar and water to a rolling boil, stirring until the sugar dissolves. Add the crushed cardamom pods and rose water, then gently drop the chenna balls into the boiling syrup.

Cover with a lid and cook on medium-high heat for 20-22 minutes — the balls will nearly double in size as they cook. Do not open the lid too often; the steam is important for them to puff up properly.

Remove from heat and let the roshogolla cool in the syrup. Refrigerate for a few hours before serving so they soak up the syrup and become wonderfully spongy and light.
