Method

Heat a large flat frying pan or BBQ hotplate over medium-high heat. Add the oil and butter together, then tip in the sliced onions with a good pinch of salt and pepper. Cook, stirring occasionally, for 15–20 minutes until the onions are deeply golden, soft and slightly jammy — don't rush this part, it's the soul of the sizzle.2
Push the onions to one side of the pan and add the sausages. Cook them over medium heat, turning regularly, for 12–15 minutes until they are browned all over and cooked through with no pink inside. Resist the urge to prick them — you want to keep those juices in.3
Once the sausages are done, rest them on a plate for a minute while you get everything ready. Lay your bread slices flat on a board — do not toast them, do not butter them, this is non-negotiable.4
Place one sausage diagonally across the centre of each slice of bread. Pile a generous heap of fried onions on top of the sausage — be generous, this is not the time for restraint.5
Squeeze a zigzag of tomato sauce straight from the bottle over the onions and sausage. Add a squirt of mustard if using. Fold the bread over in half — do not roll it, do not cut it, just fold.6
