History & Origin

Birchermüesli was created around 1900 by Swiss physician Maximilian Bircher-Benner for patients at his Zurich clinic, as part of a diet emphasizing raw fruits and vegetables, which was considered unusual and even radical at the time in a culture accustomed to heavy cooked meals. His original version used far less oats and far more grated apple than the sweetened, granola-heavy commercial "muesli" that later spread internationally, and Bircher-Benner intended it as a health food rather than a breakfast cereal in the modern sense.

Soak the rolled oats in water or milk with the lemon juice, covered, in the fridge overnight.

The next morning, grate the apples directly into the soaked oats, including the skin.

Stir through the yogurt and honey until well combined.

Scatter with chopped hazelnuts or almonds just before serving.
