About this Dish

Danish pancake balls — cooked in a special cast iron pan with spherical indentations, turned with a knitting needle or skewer to form perfect spheres. Eaten at Christmas markets and at home during December with powdered sugar and jam. The tradition of making æbleskiver is central to Danish Christmas culture. The name means apple slices, a reference to the original apple filling now rarely used.

🥚Eggs, 3 large, separated
🧈Butter, 50g melted, plus extra for the pan
🍬Caster sugar, 2 tablespoons
🫧Baking powder, 1 teaspoon

🍋Lemon zest, from 1 lemon
🍓Strawberry or raspberry jam, to serve
🤍Icing sugar, generously for dusting

Separate the eggs, placing the yolks in a large bowl and the whites in a clean mixing bowl. Beat the egg whites with an electric whisk until they form stiff peaks, then set aside.

Whisk the egg yolks and caster sugar together until pale and slightly thickened. Stir in the buttermilk, melted butter, and lemon zest until well combined.

Sift the flour, baking powder, and salt into the egg yolk mixture and stir until you have a smooth, thick batter. Gently fold in the stiff egg whites in two or three additions — this is what gives æbleskiver their light, fluffy interior, so be careful not to knock out the air.

Place your æbleskiver pan over a medium heat and add a small knob of butter into each hollow, letting it melt and sizzle. Once the butter is foamy, fill each hollow almost to the top with batter.

After about 1–2 minutes, when the edges begin to set and look slightly dry, use a knitting needle, skewer, or chopstick to gently hook under each ball and rotate it 90 degrees so the uncooked batter spills over and begins to form a sphere. Continue turning every minute or so until a perfect golden ball forms and a skewer inserted in the centre comes out clean.

Keep the finished æbleskiver warm in a low oven while you cook the remaining batches, adding fresh butter to the pan each time. Serve immediately in a bowl, dusted generously with icing sugar and with a small pot of jam alongside for dipping.
