About this Dish

A smooth, thin maize porridge sweetened with peanut butter, eaten for breakfast.

History & Origin

Bota is Zimbabwe's breakfast counterpart to sadza — a thinner, often sweetened porridge served warm, sometimes enriched with peanut butter or milk.

IngredientsServes 2
🌽White maize meal (finely ground), 1 cup
💧Water, 4 cups
🥜Smooth peanut butter, 3 tablespoons
🧂Salt, a small pinch
🍚Sugar, 1-2 teaspoons (optional, to taste
🥛Milk, ½ cup (optional, for extra creaminess)
Method
1
Pour 3 cups of water into a medium pot and bring it to a boil over medium-high heat. Add a small pinch of salt to the water.
2
In a bowl or cup, mix the remaining 1 cup of cold water with the maize meal, stirring well until you have a smooth, lump-free slurry. This step is key to preventing lumps in your porridge.
3
Slowly pour the maize meal slurry into the boiling water while stirring constantly with a wooden spoon or whisk. Keep stirring to make sure no lumps form at the bottom.
4
Reduce the heat to low and let the porridge cook gently for about 10-15 minutes, stirring frequently. The bota should become smooth and thin, almost like a drinkable consistency — much thinner than thick sadza.
5
Add the peanut butter and stir it in thoroughly until it is completely dissolved and well combined into the porridge. If using milk, pour it in now and stir through for a richer, creamier texture.
6
Taste the bota and add sugar if you prefer it a little sweet. Serve hot in bowls or mugs — this is a comforting breakfast best enjoyed straight away while warm.
