Ingredients
🍆2 medium eggplants (aubergines), sliced into rounds about 1 cm thick
🧄4 cloves garlic, minced (divided between sauce and yogurt)
🍅3 medium tomatoes, roughly chopped
🧅1 medium onion, finely sliced
🫙250g (1 cup) plain full-fat yogurt
🌶️1 teaspoon chili flakes or half a fresh green chili, finely chopped
🫚4–5 tablespoons neutral oil, for frying
🧂Salt, to taste
🌿1 teaspoon dried mint, for garnish
🟡½ teaspoon ground turmeric
🫙½ teaspoon ground coriander
Method
Serves 4
1
Slice the eggplants into rounds and sprinkle generously with salt. Let them sit in a colander for 20–30 minutes to draw out moisture, then pat dry thoroughly with paper towels.
2
Heat 3–4 tablespoons of oil in a large frying pan over medium-high heat. Fry the eggplant slices in batches until golden brown on both sides, about 3–4 minutes per side. Remove and drain on paper towels. Add more oil between batches as needed.
3
In the same pan, reduce the heat to medium and add a little oil if needed. Fry the sliced onion until soft and lightly golden, about 8 minutes.
4
Add half of the minced garlic, the turmeric, ground coriander, and chili to the onion. Stir and cook for 1 minute until fragrant.
5
Add the chopped tomatoes and a pinch of salt. Cook, stirring occasionally, for 10–12 minutes until the tomatoes have broken down into a thick sauce.
6
Gently nestle the fried eggplant slices into the tomato sauce. Spoon some sauce over the top, cover the pan, and simmer on low heat for 8–10 minutes so the flavors meld together.
7
Meanwhile, stir the remaining minced garlic and a pinch of salt into the yogurt until well combined.
8
To serve, transfer the eggplant and tomato mixture to a serving plate, spoon the garlic yogurt generously over the top, and finish with a sprinkle of dried mint. Serve warm with Afghan flatbread (naan) or rice.
