
About this Dish
The original rotating spit kebab from which all other shawarma and gyros traditions descend. Turkish doner uses heavily spiced lamb layered on a vertical spit, shaved into flatbread or served on a plate with rice and salad. Istanbul's doner shops are considered the global benchmark.

🧅Onion, 1 large grated
🧄Garlic, 4 cloves minced
🫙Plain full-fat yogurt, 3 tablespoons
🫒Olive oil, 2 tablespoons
🌶️Turkish red pepper flakes (pul biber), 1.5 teaspoons
🫚Ground cumin, 1 teaspoon
🌿Dried oregano, 1 teaspoon
🧂Salt and black pepper, 1.5 teaspoons salt and 1 teaspoon black pepper
🫓Turkish flatbread (pide or lavash), to serve
Method

In a large bowl, combine the grated onion, garlic, yogurt, olive oil, pul biber, cumin, oregano, salt and pepper to make the marinade. Squeeze the grated onion in your fist over the sink to remove excess liquid before adding it, otherwise the meat will steam instead of sear.2
Add the thinly sliced lamb to the marinade, mixing thoroughly so every piece is well coated. Cover and refrigerate for at least 4 hours, but overnight is strongly preferred for deep flavour.3
To mimic the doner effect at home, pack the marinated lamb tightly into a loaf tin, pressing out any air pockets, then bake in the oven at 180°C (fan) for 50-60 minutes until cooked through and the internal temperature reaches 75°C. Let it rest for 10 minutes.4
Once rested, slice the meat loaf as thinly as possible with a sharp knife, ideally carving from the outer edges just as a spit is shaved. Then heat a dry cast iron pan or griddle on high heat and sear the sliced meat in batches for 1-2 minutes until the edges are charred and slightly crispy.5
Warm your flatbreads directly over a gas flame or in a dry pan for 30 seconds each side until soft and lightly charred. This step is non-negotiable for authentic texture.6
Load the flatbread generously with the seared doner meat, then top with sliced white onion, fresh tomato, parsley, and a good squeeze of lemon juice. For a proper Istanbul-style plate, serve alongside rice pilaf, roasted tomatoes and peppers, and a simple cucumber-tomato salad.User Reviews
