The Philippines' most spectacular dessert — shaved ice over sweet beans, coconut strips, nata de coco, plantain and leche flan, topped with purple yam ice cream. The name means mix mix — the instruction is to stir everything together before eating. Chaotic, colourful and extraordinary.

🧊Shaved ice or crushed ice, enough to fill 2 tall glasses
🫘Sweetened red beans (adzuki), 4 tbsp canned or jarred
🥥Sweetened coconut strips (macapuno), 4 tbsp jarred
🟩Nata de coco (coconut gel), 4 tbsp jarred
🍌Ripe saba plantain bananas, 2 small, sliced and simmered in sugar syrup until tender
🍮Leche flan, 2 small portions (storebought or homemade), sliced into chunks
🟣Ube (purple yam) ice cream, 2 generous scoops
🥛Evaporated milk, 4 tbsp to drizzle
🍬Kaong (sugar palm fruit), 3 tbsp jarred, optional but traditional
Method

If using saba plantains, slice them and simmer in a small pot with a few tablespoons of sugar and a splash of water for about 10 minutes until soft and syrupy, then let them cool completely.2
Lay out all your sweet toppings — beans, macapuno, nata de coco, kaong, plantain and leche flan chunks — in small bowls so assembly is quick before the ice melts.3
Fill two large, deep glasses or bowls generously with shaved or crushed ice, packing it in firmly so it mounds up above the rim.4
Spoon each topping over and around the ice, distributing them evenly so every colour shows — there are no rules here, just make it vibrant and chaotic.5
Drizzle 2 tablespoons of evaporated milk over each glass, letting it trickle down into the ice.6
Place one large scoop of ube ice cream right on top of each glass — this is the crown of the whole dessert and should look spectacular.7
