A close cousin of Southeast Asian coconut noodle soups, ohn no khao swe reflects Myanmar's crossroads position between South and Southeast Asian cuisines.

🍗Chicken thighs, 500g bone-in
🥛Coconut milk, 400ml full-fat
🍜Egg noodles, 300g fresh or dried
🧅Yellow onion, 1 large roughly chopped
🧄Garlic, 6 cloves
🫚Chickpea flour (besan), 3 tablespoons
🌶️Dried red chillies, 4-5 whole
🟡Turmeric powder, 1 teaspoon
🐟Fish sauce, 2 tablespoons
🥚Hard-boiled eggs, 2 halved for serving

Blend the onion, garlic, and dried chillies into a smooth paste using a blender or mortar and pestle. Heat 3 tablespoons of oil in a large pot over medium heat and fry the paste for 5-7 minutes until fragrant and darkened slightly.

Add the turmeric and chicken thighs to the pot, stirring to coat the chicken well. Cook for 5 minutes until the chicken starts to colour, then pour in 600ml of water and the fish sauce. Simmer for 25 minutes until the chicken is cooked through.

Remove the chicken, shred the meat off the bones, and set aside. Discard the bones and return the shredded chicken to the broth.

In a small bowl, whisk the chickpea flour with 100ml of cold water until completely smooth with no lumps. Pour this mixture into the simmering broth while stirring constantly to thicken the soup. This gives Ohn No Khao Swe its signature slightly thick, velvety texture.

Stir in the coconut milk and bring the soup back to a gentle simmer over low heat. Do not let it boil hard or the coconut milk may split. Taste and adjust seasoning with more fish sauce or a pinch of salt.

Cook the egg noodles according to the packet instructions, drain, and divide between deep bowls. Ladle the coconut chicken broth generously over the noodles and top each bowl with half a hard-boiled egg. Serve with crispy fried onions, fresh coriander, lime wedges, and chilli flakes on the side for guests to help themselves.
