🥩Beef (top round or sirloin), 4 thin cutlets about 150g each, pounded very thin
🍞Breadcrumbs, 1 cup fine dry breadcrumbs
🥚Eggs, 6 large (2 for breading, 4 for frying on top)
🍚White rice, 2 cups cooked and seasoned with salt
🥔Yellow potatoes, 4 medium, boiled and sliced into rounds
🍅Tomatoes, 2 medium, finely diced
🧅White onion, 1 medium, finely diced
🌿Fresh parsley, a small handful, finely chopped
🌶️Green chili or jalapeño, 1 small, finely diced (optional)
🫒Vegetable oil, enough for shallow frying, about 1 cup
Method

Pound your beef cutlets between two sheets of plastic wrap until they are very thin, almost translucent, about 3-4mm thick. Season generously with salt, pepper, and a pinch of cumin on both sides.2
Beat 2 eggs in a shallow bowl and place the breadcrumbs in another. Dip each cutlet into the beaten egg, letting the excess drip off, then press firmly into the breadcrumbs until fully and evenly coated on both sides.3
Heat about 1cm of vegetable oil in a large skillet over medium-high heat. Fry each breaded cutlet for about 2-3 minutes per side until deep golden brown and crispy, then drain on paper towels.4
Make the fresh salsa by combining the diced tomato, onion, parsley, and green chili in a bowl. Season with salt, a squeeze of lime juice, and a drizzle of oil, then set aside to meld at room temperature.5
In the same pan with a little fresh oil, fry the remaining 4 eggs sunny-side up over medium heat until the whites are just set but the yolks are still runny, seasoning lightly with salt.6
To plate, start with a generous scoop of rice on one side of the plate and arrange the sliced boiled potatoes beside it. Lay the crispy beef cutlet over the rice and potatoes, then place a fried egg on top and spoon the fresh salsa generously over everything.User Reviews
