
About this Dish
A spiral pastry rolled around a wooden cylinder, grilled over charcoal and rolled in cinnamon sugar — one of Central Europe's great street foods. Sold at Christmas markets from Prague to Vienna. Originally from Slovakia and Transylvania, trdelnik has been adopted as a symbol of Prague's old town, despite purists arguing it has no Czech culinary heritage.

🌾Plain flour, 500g
🥛Whole milk, 250ml, warmed
🧈Unsalted butter, 80g, melted and cooled
🥚Egg yolks, 3 large
🍬Caster sugar, 60g, plus extra for rolling
🫧Instant yeast, 7g (1 sachet)
🧂Salt, 1 tsp
🍂Ground cinnamon, 2 tsp, for the sugar coating
🌰Vanilla extract, 1 tsp
Method

Combine the warm milk, yeast and a pinch of sugar in a bowl and let it sit for 5–10 minutes until frothy. In a large mixing bowl, whisk together the flour, sugar and salt, then make a well in the centre.2
Pour the yeast mixture, egg yolks, vanilla extract and melted butter into the well. Mix everything together until a soft, slightly sticky dough forms, then knead on a lightly floured surface for about 8–10 minutes until smooth and elastic.3
Place the dough in a lightly oiled bowl, cover with a clean tea towel and leave to rise in a warm spot for 1 hour, or until doubled in size.4
Mix the extra caster sugar (about 150g) with the cinnamon on a large flat plate and set aside. Once risen, divide the dough into 6 equal portions. Roll each portion into a long rope about 2cm thick.5
Wrap each dough rope in a tight spiral around a greased wooden rolling pin or thick dowel rod (about 3–4cm diameter), pressing the edges gently together so it stays in place. Roll each wrapped cylinder firmly in the cinnamon sugar mixture to coat generously.6
Grill the trdelník over a medium-hot barbecue or under a hot grill, turning the rolling pin slowly and constantly for 10–12 minutes until the dough is evenly golden, caramelised and cooked through. Keep turning — the sugar burns quickly if left still.7
Slide the cooked trdelník carefully off the rolling pin while still warm. Serve immediately on their own, or fill the hollow centre with whipped cream and fresh strawberries for a market-style treat.User Reviews
