History & Origin

Holubtsi, meaning "little pigeons" in Ukrainian, is a dish found across much of Central and Eastern Europe under various names, but it holds a firmly established place in Ukrainian home cooking, often served at family gatherings and holidays like Christmas Eve, when a meatless version filled with rice, mushrooms and onion is traditional as part of the twelve-dish Sviata Vecheria meal. The name is thought to reference the rolled shape resembling small birds. Cabbage, easy to grow and store through Ukrainian winters, made it a practical dish for stretching smaller amounts of meat across a larger, filling meal.

🥬Large cabbage leaves, 12
🥩Minced beef and pork, 500g
🍚Rice, partly cooked, 150g
🧅Onion, finely diced, 2
🥕Carrot, grated, 1
🍅Tomato passata, 500ml
🥄Sour cream, to serve
🧂Salt and black pepper, to taste
🫒Sunflower oil, 3 tablespoons
🧂Salt, black pepper, and dried marjoram, to taste
Method

Core the cabbage and blanch whole in boiling water for a few minutes until the outer leaves soften enough to peel away. Trim the thick center rib of each leaf.

Mix the minced meat, partly cooked rice, half the onion, salt and pepper for the filling.

Place a spoonful of filling at the base of each leaf, fold in the sides and roll up tightly.

Sauté the remaining onion and grated carrot in a large pot until softened. Arrange the cabbage rolls seam-side down on top.

Pour over the tomato passata mixed with a little water to just cover the rolls. Cover and simmer gently for 45 minutes to 1 hour.

Serve hot with a spoonful of sour cream and the tomato sauce from the pot.
What Makes it Authentic

The cabbage leaves must be softened first, either by blanching or freezing and thawing, to make them pliable enough to roll without tearing. The filling is a mix of partially cooked rice and meat, which finishes cooking together as the rolls braise slowly in sauce.
